Chicken Soup Kinda Day

Before 10 this morning, icicles were beginning to form. This is going to definitely be a weekend to stay at home.

I had planned to get up this morning and start sewing but by the time I got finished with my morning chores and noticed the ice, I decided to do some work in the garage. We had been able to get all the cars inside but as we spread out trying to unpack, we had been parking Chad’s car outside. So, I decided to work in the garage and get the spot clean to park Chad’s car inside. Got that done.

Then my elderly neighbor asked me to changed the bandages where she recently had shoulder surgery. Ugh! I didn’t tell her I can’t look at wounds but I pulled myself together and did it. I had a pot of chicken soup simmering so I took her some. This is a recipe mom shared with me last week and it is SOOOO good! Even Chad (Mr. Picky Eater) likes it.

Mom gave me the recipe over the phone and I didn’t write it down word for word so here’s my interpretation:

Creamy Chicken Soup

3 T. butter
1/2 onion, finely chopped
2 or 3 potatoes, chopped into tiny cubes
4 carrots, sliced 1/4″ thick
3 cans chicken broth
2 c. shredded chicken (optional)
3 T. parsley, chopped
2 cups milk
1/4 c. flour
8 oz. cream cheese
Salt & Pepper

Saute onion in butter. Add potatoes and carrots. Add chicken broth. Simmer for 15 minutes or til veggies are tender. Add parsley.

Mix flour into milk and stir til lumps are gone. Add to soup and simmer til thick. Add cream cheese and stir til melted.

Season with salt and pepper.

Thanks, Judy, for this yummy recipe ! I just LOVE chicken soup, it’s soooo comforting, especially in winter. I even read some books entitled “chicken soup for the women’s soul” : a recollection of funny, sometimes moving, short stories, but in all cases they’re a real conmfort too, and I guess that’s why they chose that title ! LOL

Hi Judy! Your comments are hilarious! I can just see the look on your face when the little lady ask about the bandage change,lol! I would be like, UGGG! It was very nice of you to help her and I’m sure she appreciated it, plus the soup, yummy :o ). I wonder if she quilts? Hmmm. I’m glad everything is falling into place in your new place, how is Speck doing,BTW? I hope he’s a happy babydog! About the pole in the studio, can you have somebody put 2 poles closer to the wall on each side and take that one down? Just a thought from someone who is NOT an engineer,GRIN! “please, do not try this at home” :o D Amie in Tn.

Sounds like I am having chicken soup soon! Thanks for posting the recipe. I love cream based soups so much better than broth based ones!

God bless you for helping someone who really needed you. I’m sure it wasn’t the most pleasant thing in the world to change your neighbor’s bandages, but I’m also sure she would not have asked if she didn’t trust and appreciate you. It was probably very difficult for her to ask you to do such a personal thing. You are a good neighbor and a true friend!

can’t imagine not having a garage today — its down to about -46 with the wind as the high today (its really only about -30 Celcius)– If nothing else its reminded me to very thankful for shelter and heat, and cars, and warm clothes and the like… Definately a chicken soup kinda day :-)

Judy thank you for sharing your mom’s recipe. I read your post before my trip to the grocery today – so I added to my list chicken broth, carrots and parsley :)

I pasted to a word document and printed it out to go in my 3-Ring binder. I am looking forward to making it this weekend – as I have never made “homemade chicken soup” before! Imagine that! :c) ~Bonnie

Hi Judy, I loved your recipe for Cream of Chicken soup. It has been so cold here, soup was the perfect meal. I substituted corn starch for the flour (allergies) and it came out great. Very yummy. This one goes in my recipe box. Thanks.
