Blackberry Cobbler

March 28, 2009

We have several gallons of blackberries in the freezer and, since we ordered beef Thursday, the main goal as far as cooking goes is to get the freezer cleaned out.  Yesterday I made blackberry cobbler with some of the blackberries.

What’s better than warm blackberry cobbler?  Bet you guessed!

Blackberry cobbler smothered in Blue Bell Homemade Vanilla ice cream.

Here’s the recipe I used:

Blackberry Cobbler

3 cups blackberries
3/4 c. sugar
1 c. flour
1 c. sugar
2 tsp. baking powder
1/2 c. milk
1/4 lb. butter

Melt butter in 8″ x 8″ pan.  Mix blackberries and 3/4 cup sugar.  Mix flour, 1 cup sugar, baking powder, and milk.  Spread mixture over melted butter but don’t stir together.  Pour berry mixture on top. Do not stir.

Bake at 375 degrees for 50 minutes to an hour.

I have a bunch of peaches and blueberries in the freezer, heck I need to use them up before it’s picking season again! Cobbler sounds good on a cold day like this, I may just whip up a peach one.

I need to get the shredded zucchini out of my freezer. I think bread with blueberries sounds good. I wish I had some blackberries. I have to go now, I have drool on my chin. ;-)

Sorry to hear about your FAFSA woes. As soon as I read your post, I thought “why didn’t she call me?” Then I realized you have no idea who I really am, lol. I’m a blog lurking quilter, who is the director of financial aid at a local university. I have 20 years of financial aid experience under my belt. Not bragging really, I just love my job!

Once you make it through the first year of filing a FAFSA, the rest is downhill!! I promise.

Happy Quilting!
Cindy

Judy…..the blackberry cobbler brings up so many good memories. As I child, my mom would send us out to pick blackberries and would make the best cobbler you ever ate. We would also make some homemade ice cream on the old fashion ice cream maker. Anyways do are you putting all the receipes that you post online in your lime green kitchen blog? just wordering! Now since I don’t pick blackberries anymore I usually buy a Marie Callender blackberry cobbler. It is about the best I have found in the market. Thanks for the memories. :o )

Looks yummy!!! I don’t know about you, but we have way too much stuff in the freezers for two people to eat in a reasonable amount of time. Especially since I can’t eat most of it anyway or my blood sugar shoots up and weight soars.

I found a package of peaches in my freezer from 2007 Wednesday. I used this exact recipe for peach cobbler. It was delicious even with 2 yr. old peaches. I still have some blackberries picked from our garden last year. Guess that I will be using them in the next few weeks.

We have a new CPA this year and I’m waiting to hear that he’s done with our taxes – hopefully he’ll give us a call this week.

Love your Dad’s quilt. I worked through the night quilting a HeartStrings top and making blocks for Adam’s quilt but didn’t do anything today except some shopping. Hopefully tomorrow I’ll find some time to participate again in the Quiltathon!

That blackberry cobbler looks scrumptious. Thanks for the recipe. I saw some blackberries in the grocery store, of all places, but didn’t buy any. Now I wish I had some.
