Our Comments: Great, easy recipe. I’ll add more seasonings next time . . probably season the ground meat as I’m browning it. And, I’ll add a bit of milk to the soup before spooning it over the dish. The soup kinda stayed on top and the potato/carrot layers stayed right where I put them . . no blending together at all.
Ground Beef with Potatoes
1-1/2 pounds ground beef, browned
1 onion, chopped
1 clove garlic, chopped
1 green pepper, chopped
4 large potatoes, peeled and sliced
3 carrots, grated
2 cans cream of mushroom soup
1-1/2 cups sharp Cheddar cheese, grated
salt and pepper
In a large skillet, brown the ground beef. Drain the fat. Add the onion, green pepper and garlic. Saute til they’re mostly done. Dump the meat mixture in a greased 2 quart (or larger) baking dish. Add the potatoes. Season with salt, pepper (this is a good place to add Slap Ya Mama – if your store doesn’t have it, ask them to get i!). Add the carrots. Pour the soup over the carrots. Cover and bake at 350 for 40 – 50 minutes or til potatoes are tender. Uncover, sprinkle cheese over the top. Continue baking another 5 minutes.
We’re having this with a salad and crusty bread (from the Artisan Bread in 5 Minutes a Day book). Speaking of that book that I so love, they have a new book using whole grains and some gluten free recipes coming out in October. Can’t wait!




Yum! Sounds good. We are having Summer Soup and cornbread. I made a couple of recipes of the 5minute Artisan bread and we liked it a lot. We even made some cinnimon rolls with it and they were really good. Thanks for the recipe, it is printed and going in my notebook.
Vince will probably notice on the fifth night that, although he is getting different dishes, they all contain Hamburger. The recipe above sounds like something my husband would like and when I get back from Kansas City, he’s getting it for dinner!!

Judy………the recipe looks like one I do……..I do add crunched up potatoe chips on top of the cheese……..but no matter how you look at it………hamburger is still hamburger……..I’m sticking with my day 3 that Vince will let you know that its hamburger again!!!!!

Hi Judy, I made this for myself tonight and it was good! Since it was just me, I halved the receipe. I usually don’t cook much, but after I read your receipe, I realized it has probably been at least a month since I have had a hot, homecooked meal.
Please post more easy receipes like this one! This was quick enough for me to make after a full day of work, which helps a lot. I had it with salad, but no bread, although I bought the book at your recommendation and I’ve made bread with it in the past.
