Yesterday’s Salad

Late last week I made pesto chicken, which is simply marinating chicken strips in pesto, then grilling it and then adding a pesto sauce (more pesto, cream and jalapeno powder).  Instead of grilling chicken yesterday, we used the leftover pesto chicken on our spinach salads, along with boiled eggs and crumbled bacon.

Add a little dressing and this was quite a good meal!

I think we’ll do just fine eating these salads all week.

    This makes me wish I had started growing some spinach this year, looks like I’ll have to get to the store…soon! Looks yummy!
