The Goat Cheese Salad Again

All day I kept thinking about that salad.  Vince has a dinner to attend tonight and he said he would bring home fried catfish for me from my favorite catfish joint.  I figured he’d enjoy having a little salad too so I made another one.  This time I didn’t have any almonds so I substituted pecans.  All the strawberries were used last night so tonight I used blueberries.  It was every bit as good as it was last night.

Now, I’m out of lettuce, strawberries, blueberries, pecans, almonds and goat cheese so til I make a trip to the grocery store, we will not have this salad again.  :(

Looks every bit as good as it did the first time! Got my book, according to my son. Haven’t had time to look at it yet. Maybe before bed time.

i was going to say the same thing!
this salad looks as pretty as the first salad. i may just have to pick up salad things when i go grocery shopping next time.

Peaches, pears, and banana’s are also good fruits to put in a salad. I also like the trail mixes that are nuts, cranberries, raisons in a salad.

Just looking at your salads makes me want to fix one right now!!! And it almost bedtime here. It seems when I go to make one of your suggested salads, there are always 2 or 3 things I don’t have. By the time I run to the store, stand in line for ages and get home (having gone through multiple stop lights and waiting, waiting), I’m out of the mood to fix one. I have been doing the salad in a jar though, and this works great!!

  • Yummy! That looks great.
