Chicken Enchiladas with Tomatillo Sauce

For dinner last night, we had this recipe – Chicken Enchiladas with Roasted Tomatillo Chile Salsa.


I should have taken more pictures but I didn’t.  This is the chicken cooking in the sauce or, I think I was actually adding the meat to the tortillas at this point.  The only deviation I made from the recipe was instead of buying an already roasted chicken, I roasted a big chicken the night before for dinner.  We ate part of it and used the leftovers for this dish.   We both loved this recipe and I ended up with two dishes for the freezer and one I kept in the fridge that I’ll heat up for dinner tomorrow night.

We had the black beans with it but not the rice.  I’m not crazy about this kind of rice . . though Vince is and the first thing he asked me was “Where’s the rice?”

We have a lot of tomatillos getting ripe so I’ll be looking for recipes to use more of those!  This is a recipe I’m adding to my favorites.

Noisy Cicadas

Another one of those things no one told me about in Texas . . the cicadas that make noise non-stop during the night.  It’s seasonal and has just started.  About a week ago, we began hearing them at dusk but they would stop not long after complete darkness occurred.  The last couple of days, they’ve been going all night!  We don’t notice them so much in the house but outside, they’re so loud I almost stopped my watering last night and went in and got ear plugs but then I figured I needed to be listening for snakes or mountain lions or whatever other critter might want to sneak up on me.

I had my camera in my pocket last night and decided to record the noise.  I was just finishing up my watering, doing the final check on the chickens and was headed to turn off the faucet.

Sweet Treat Quilted

This is the Color Palette Challenge for May.  This may be the first month I’ve actually quilted the top, though I’ve made a top for each month so far.


This quilt makes me smile – it’s happy and bright!  The batting is Warm & Natural.  The top thread is Signature Cotton, color Daisy.  Even though the background is white, I thought using white thread would stand out like a sore thumb on the orange fabric so I went with the pale yellow thread. The bobbin is Perma Core and the color is Rye Beige.  The panto, my favorite, is Square Spiral by Keryn Emmerson.


The backing is pieced, using a piece of fabric that’s been in my stash since the late 90’s.  If I recall correctly, this piece was a gift from a Secret Sister program.  The orange sections aren’t nearly as “standouttish” as they appear in the photo.  This orange is actually in the backing fabric and this is the orange that will be used for the binding so it will kinda “frame” the backing and then have those two strips across the back.
