Dinner Conversation

My friend, Judy, had sent me this recipe and I made it last night and it was delicious!  I served it with coconut rice which involves opening one can of coconut milk, bringing it to a boil, adding 1 tsp. salt, 1 cup of rice; turning down the heat to simmer, adding a lid and cooking til done.  Then I added about 1/4 c. chopped cilantro and about 2 T. chopped Thai basil.  Yum.  And, sorry . . I was trying to get everything done outside before the storms got here (they never arrived), and get dinner done and then I was trying to hurry and eat and get the kitchen cleaned and take my shower because if the electricity goes off, we have no water.  Vince can fire up the generator but I doubt he would do that the minute the power goes off . . knowing Vince, he’d wait at least a week before using the generator.

But . . back to dinner.  We were sitting there and I was trying to be a nice wife and carry on a caring conversation.  We were talking about which dinner Vince liked best — the dinner I fixed last night or the enchiladas the night before.  He said on a scale of 1 to 10, they both rated 11.  No help there!  Then we had this conversation:

Me:  What concerns you the most these days?
Vince: What do you mean by “concerns”?
Me: You know . . what do you keep thinking about a lot?
Vince: I guess the thing I think about most is whether you’re going to make pizza this week? Tomorrow is Thursday and we haven’t had pizza this week!

That’s what concerns my husband . . that’s what keeps him awake at night . . wondering when we’re having pizza again.  I guess on a scale of 1 to 10, my pizza might rate 12 with him!  :)

You know what we’re having for dinner tonight, don’t you?

June 1 – The Feather Lessons – These are basic, get you started type feathers.  We’ll be working on the Carpenter’s Star top.  The lessons will stay on the blog so if you’re not able to do them along with us, they can be referenced at your convenience.  Simply click on the “Tutorials” tab at the top and find the Feather post.

2012 Color Palette Challenge – Runs through 2012.  New palettes are posted on the first of each month.  Join us at any time!  There’s a button on my sidebar that can be clicked to get to the details.

Stars & Stripes Sampler – My plans to get this one done in 2011 were changed so the plan is to start this one on September 1, 2012.

Road to Llano – This project will probably begin July 15. It will be a mysterious Quilt-Along! :) A picture of the quilt will be posted for those who want to see it but it will not be posted in plain sight. Fabric requirements will be posted June 15.  There will be a limited number of kits available in at least two different colorways. You do not have to purchase the kits from me — you can buy your own fabric or use stash fabric.

No one should ever feel like they have to do anything or everything but those are the “group projects” we currently have or will have running.

The Evening Sky

Last night there were storms in the area.  Nothing severe was real close to us but in the area, there were reports of  large hail and we were under a tornado watch but thankfully, nothing ever happened here.  But, the clouds were putting on a gorgeous show for us.  All of these cloud photos were taken with the iPhone and were taken within about a one hour period.

The storms seemed to be all around us.  I would take a few pictures, then when I’d look out the window, I’d see that the clouds had changed completely and I’d take more pictures so, without a bunch of words from me, I’m going to share some of pictures.

It was an amazing show put on by Mother Nature.  Just when I think the critters and bugs and snakes are going to make me crazy, we have such beautiful sights.  The bad news is . . all the wind and thunder and clouds and we didn’t get a drop of rain.
