Dinner Tonight

IMG_1292Life goes on and we must eat.  I’m sure spiders would be unhappy if they had to munch on boney, skinny humans!  Since we’re not expecting any visitors and since there’s no danger of either of us being described as boney and skinny, the spiders should be happy!  :(

Yesterday I had rubbed seasoning on a slab of baby back ribs and had them ready for the smoker.  Vince took care of that for me.  I cooked some fresh squash picked from the garden yesterday and opened a jar of home canned baked beans.

A good cooking blogger would have dusted that excess flour off the bread before baking and photographing it but a spider bitten cracked foot blogger just left it on there!  This was our first loaf of sourdough bread and while not as pretty as CJ’s, it sure tasted good.  In the food picture, you’ll see a little cup of olive oil with crunchy roasted garlic that we used for dipping sauce.

I made a second loaf of sourdough bread using a loaf type recipe.  We’ll slice this one for toast and sandwiches.  I see lots of sandwiches in our future for the next few days.

Sourdough Bread

Let me just start out by saying this is all my friend, CJ’s fault.  So much of what happens around here is CJ’s fault and I’ve always believed in giving credit where credit is due so . . this whole blog post, the credit card bill that is going to send Vince into a fit, the hours and hours I’ve spent figuring this out . . all CJ’s fault.

Through the years, I’ve made sourdough bread.  I even had Herman for a while.  He was kinda like sourdough.  Like all the previous sourdough I’ve messed with, the Herman starter came from a friend, probably wasn’t real sourdough at all but I did it and I enjoyed it.  I haven’t had sourdough going for several years but after seeing CJ’s bread, decided that I had to get some real sourdough and try this.

What CJ didn’t mention in those posts was that you need a Ph.D. in Sourdoughology to do this.  I swear . . it’s worse than having an infant around.  I’ve been messing with this for almost two weeks and we enjoyed our first sourdough bread this afternoon.

I started by ordering a starter from these folks . . just as CJ recommended.  It arrived.  I read the instructions . . which is where I realized I was probably in over my head.  The first indication that I might have a problem was when I said to put it all in the “proofing box”.  What proofing box?  No one told me I needed a proofing box!  CJ??

There had to be some way around that.  All I had to do was keep the starter at 90º for 24 hours.  I dug out a thermometer and on my front porch in the shade, it was exactly 90º.  But, at night, it would be about 72º.  That created a bit of a problem.  So, I rigged up a proofing box . . my big canner in the laundry room with the a/c vent closed with my Scentsy warmer (minus the smell good) down in the canner, with the lid partially on.  That worked.  Feed it, stir it, divide it, do this, do that.  Oh . . and if it smells really bad, it’s probably contaminated and needs to be ‘washed’.  What?  Wash the sourdough starter?  And did it smell bad?  Oh, my . . the whole house smelled like someone threw up . . last week!

At this point, I decided my starter was definitely contaminated . . and they say most all flour has some contamination so it’s not unusual to have the starter get contaminated and need to be washed.  This is when the decision was made to order a different starter . . maybe one that didn’t require quite so much expertise and babysitting.  I ordered a starter from King Arthur, as well as a starter from Breadtopia.  Then I read on a website that it’s normal for the starter to smell like someone threw up . . last week . . and after a few days, that smell goes away.  So, I kept feeding and watering and babying the first starter and sure enough, the smell went away.

DSC01902aFinally, the starter seems to be alive and growing and bubbling and doing what it’s supposed to do.

Saturday I decided to start a batch of bread . . two batches to be exact.  This picture was taken after I’d fed the starter, let it sit 2 – 4 hours, then divided it and fed it again and then it needed to sit at about 70º for 2 hours and then at about 80º for 8 hours and then mixed up for the bread dough and allowed to sit for . . heck I don’t know . . I sure hope this all gets easier after a few times or either the bread is so good that it’s worth what I’m going through.  Notice the little container . . that’s the King Arthur starter that I haven’t even been brave enough to open yet.  I do believe I’m going to need another fridge for all this starter and culture and whatever else they call the various steps.

I’m happy to say that the bread worked.  It’s delicious and I’ll write another post about that.

Visions of Medical Bills Dancing . .

Looks to me like he’s concerned about medical bills . . or maybe dinner!  Or, maybe having chicken duty for the next few weeks.

No matter what he’s thinking, he doesn’t look too happy about being there but at least he isn’t wearing his holey blue shorts, threadbare green T-shirt and rubber flip flops. 

I suppose I shouldn’t be making fun!  In the past few days, he’s come to my rescue to kill giant spiders, butcher and clean a mean rooster, capture the black widow spider out of my boot . . he definitely deserves a hero hat this week . . even if it’s kinda hard to coax a smile out of him sometimes.

Bad Things Come in Threes?

What are the chances of getting bit by a brown recluse, a black widow and fracturing a bone in your foot, all within two days?

While this will sound like a poor, pitiful me post, it is not.  My bestfriend’s daughter was in a terrible auto accident last week and was seriously injured, has had several surgeries and will be in the hospital for weeks and it will be months before she can walk again so I know I’m a lucky girl in so  many ways.  I’ve had a temporary setback.

I knew this was coming.  We’re over run with spiders, scorpions, snakes and who knows what else.

1.  Friday morning I woke up with a bite on my leg.  I was pretty sure it was a spider bite.  It didn’t hurt or sting but it kinda itched and a huge circle was red, hard and felt hot.  We looked up on the internet and felt pretty sure it was a brown recluse bite and we watched it to see if it got any worse or looked like we should go to the doctor.  By Saturday night, it was looking better and wasn’t bothering me much.

2.  This morning (Sunday), when I went to get out of bed . . always so excited to face the day . . I swung my right foot over the bed and banged it hard against the wooden sideboard and the doctor thinks the bone in the side of my foot is fractured.  We’re waiting on x-ray results.  The radiologist isn’t in on Sunday so it will be tomorrow before we know.  If it is cracked, I’ll have to go back tomorrow and get a boot (hopefully, a boot without spiders!).  Not so sure working in the garden or dealing with chickens is going to be easy for the next few weeks but . . it could have been worse but honestly . . how hard is it to fracture a bone before ever putting your foot on the floor in the morning?

3.  Here’s where it gets bad!  My foot was hurting but I knew I had to pick beans and cut okra.  I know to shake out my boots.  What I do is hit them on the back of the heel on the concrete several times, then look inside to see if there’s anything that’s fallen to the back.  I did that and nothing.  I put the boots on, hobbled out to the chickens, played with them for a few minutes, then I’d picked 2 rows of beans.  I felt something stinging my toes on my right foot.  I though  . . there must be something prickly in my boot . . knowing it couldn’t be a spider because I’d shaken my boots out well.  I felt stinging again and decided I’d better take the boot off and investigate.  There it was . . a black widow and I got several bites on my toe.  One thing we read said you didn’t have to go to the E.R.  Another thing said seek immediate medical attention so we went to the E.R.

Vince put the spider in a zipper bag and we took it with us and went to the E.R.

They only give the ante venom if you’re experiencing difficult breathing or severe cramping.  I was not . . I just experienced extreme stinging and as I write this, almost 4 hours later, it still stings just like it did when it first happened.  I was very lucky in that it was a male and the females are way more dangerous than the males.  Some websites say males don’t sting . . I’m telling you they do!

The doctor was more concerned about the bite on my leg from Friday, which they think is a brown recluse bite.  I didn’t see the  spider as it happened  during the night . . in my bed! 

They gave me antibiotics, topical ointment, and pain meds.

I’m trying to stay calm and not let frustration get the best of me but I’m telling you . . the bugs and snakes and spiders . . it’s about more than I can take.
