Temporary Blog

If you didn’t get the database error messages this morning, then I don’t know what to say . . and you know I’m never at a loss for words.  The minute I see “database error”, I break out in a sweat and want to cry.  I couldn’t get on at all this morning for a while.  Sara has me down for the blog re-do starting the week of July 9.  Last week she had tweaked a few things but knew it wasn’t fixed and hoped it would work til the new blog was done.  It didn’t so I again went begging to her and she set me up with a temporary fix.  Not everything is where it needs to be but it’s working and it should load more quickly.  And, if I see that darned database error message again, I may just give up.  That’s how frustrated I am with that!

She and I have discussed some of the things I like, some of the things you all expect and I can’t wait to see my new blog.  For now, I can’t tell you how happy I am with her . . the fact that she cares and that she made time to help me when it wasn’t my turn yet . . you know how much that means when you’re desperate!

Please be patient for a couple more weeks and please . . if you need a blog makeover, give Sara a shot.  Her prices are great, she’s quick and she has to be good because she’s managed to do more to get me up and running than several others who have worked on it in the past.

Dinner Tonight

It’s funny what people do when they get old.  I remember my grandparents doing it and then my parents doing it and now we’re doing it.  What are we doing?  We’re cooking one steak and splitting it.  We’re baking one potato and splitting it.  Frugal?  Stingy?  Realistic?  I don’t know but last week I bought a package of strip steaks on sale.  For three good sized steaks, I paid about $9 for the three so that’s $3 each.  We cooked one and split it.  We sure are saving $$ on the food bill when we do that.  So, for dinner tonight, we grilled the steak, baked the potato and had zucchini and bread. 

The zucchini I cooked tonight were kind of big so I peeled them and then sliced them into fairly thick slices.  In a little butter and olive oil, I sauteed a sliced onion and the zucchini, added fresh pepper and some low sodium soy sauce.  We love zucchini like that!

Grilled Pork Chops

After sharing our dinner picture with the grilled pork chops, many asked how I cook good pork chops.  Here’s how I do it.

We like thick pork chops and I’ve had good luck finding good pork in the grocery stores here.  There’s a local meat market that has really good pork chops. 

On the morning of the day I’m going to grill pork chops, I take them out of the fridge, rinse them off, and season them well on both sides.  I do not use salt at this point.  I’ll use a little thyme or rosemary, onion powder, garlic powder, black pepper – use whatever you want.  Then I put them in a zipper back and leave them in the fridge til time to cook them.

When it’s time to grill them, I build a really hot fire, just large enough for however many chops I’m cooking, and then I build a fire that’s not so hot.  You know . . just pile more charcoal in one spot than in the other.

Put the chops on the hot side and sear them on both sides.  Don’t burn them but get them really brown and this helps hold in the juices.  Then move them to the not so hot side. 

I like cooked pork to reach 145º.  Using some kind of instant read thermometer, when you think the temp might be getting close, check it.  You don’t want to poke any more holes in the meat than you have to . . this allows juices to drain out.  When the temp of my meat reaches about 140 or 142, I take it off the heat, wrap it in heavy duty foil and bring them inside to sit for about 8 – 10 minutes.  The meat will continue cooking and should easily reach 145º.  Check it to be sure.  Allowing the meat to sit for a few minutes causes the juices to stop draining so that when you cut into the chops, all the juices don’t drain out but stay within the meat.

Once you serve the meat, each person can add their own salt if needed.

Yum!  Can hardly wait for dinner.  Wish we were having pork chops tonight!

Wooly App

IMG_0086Apps . . do you have too many or not enough?  These are the apps on the third page of my iPad.  The other night I couldn’t sleep . . that never happens and while I suppose no one likes tossing and turning all night, it just gets the best of me.  My foot was hurting . . the pain meds made me jittery and I was miserable.  I kept flipping back and forth between the iPad and the Kindle.

IMG_0087If you’re on Ravelry, have you seen the Wooly app?  It’s $2.99 and so worth it!  I love it but then I really love Ravlery.  You’re able to see your projects, queue, friends and stash.  Yarma is another app and with it, you can take pictures and directly update your projects, saving a few steps from doing it on the computer.  It’s so nice to be able to update my projects, browse through my stash and see what’s next in my queue . . not that I ever really work in the order of my queue.
