What’s Cooking – Week 1, 2013

The ingredient to be used this week is:

Carrots

Make anything you want.  Be creative.  Make something yummy.

The success of this little challenge will depend on whether others are willing to try recipes, take pictures and share links.  This isn’t going to be fun if there are just a few of us doing it so . . start searching for carrot recipes!

    Don”t have a blog, but it just occurred to me I baked carrott-raisin-spice muffins this week. Yum! I was hungry for carrott cake but since I have celiac troubles, I have to stick w/gluten-free. I added maybe 3/4 c. shredded carrotts to my mix, also made some cream cheese frosting. Muffins were delish and I didn’t feel bereft.. I use a gluten free mix for muffins every week to avoid bread, cereal and desserts, and it is the best thing I’ve learned to do in cooking. Trying to save my poor GI tract that is aging faster than I am. But your blog reminded me I made something with carrots so I’m adding my 2 cents.

    I didn’t do sweet potatoes, just because I wasn’t cooking, but I have a plan for carrots!

    Last week we had sweet potato casserole(Senator Russell’s Sweet Potato Casserole) for Christmas Eve Dinner at my sister-in-love with the leftovers Christmas Day. Tonight we had “Rainy Day Crockpot Stew” that Bonnie Hunter posted on her Qiltbille’s Quips & Snips blog.

    I don’t have a blog but I DID roast sweet potatoes, carrots, brussel sprouts and onions all together with olive oil and LOTS of salt and pepper. They were GREAT and used up the leftover vegies in the house.

    Oh boy! Look at all the people posting sweet potato recipes! This is fun. I’m going to read them all tomorrow at work. During my lunch hour, of course.

    This will be fun… Shall we post the carrot dish at the bottom of the sweet potato dishes? Since the notation in the comments area says that the link closes in 5 days posting in that spot seems logical. You are so organized, Judy, that you have probably said where to post, and I just missed it. Sorry. I’ll look in earlier posts…. then make “Ginger Carrots” tonight.
