What’s Cooking – Week 3, 2013

I can’t wait to see the spinach recipes that get submitted.  Even though spinach is not one of the foods that I LOVE, I like it ok and the nutritional value keeps me using a lot of it.

If you haven’t checked out the recipes submitted, if you like to cook or like new recipes, you might want to spend some time on these recipes.  Over the weekend, I made Jo’s Gingered Carrot Soup recipe, though I changed it just a bit, and it was delicious! I have some still in the fridge and I’ll heat it up to go with our hot dogs for lunch.  And I made Cassandra’s Carrots and they were so good!  If it warms up a bit, I’m going to go dig more carrots and fix those again tonight.  They were amazing!  They were good, they were quick and they were easy.  I’m thinking that even someone who is sure they don’t like carrots would love these.

Cream Style Corn

I don’t like it!  I don’t even like to look at it but if I can disguise it in a recipe, I use it.  Don’t ask me why I don’t just forget about it and not use it but for some reason, I seem determined to make myself like it.  After all these years, you’d think I’d give up.

    This really will be a challenge as I do detest cream style corn. I will have to find a way to disguise it (if there is any way to do that).

    Hum…I wonder if I can find my corn casserole recipe. I haven’t had it in a while.

    Way back in the mid-80s, I made a face at the creamed corn the lunch ladies were serving that day. They never served it again while the school was operational ! The students all thanked me but I always felt bad that they were deprived of the ‘benefits’ of creamed corn. To this day, I still won’t eat it.

    Yum, creamed corn! Not my favorite but try it in Mexican Corn Bread.

    Some of the spinach dishes look interesting but it is funny how most of us try to hide/disguise it some way. Coupla may tries here.

    Well I guess I am in the minority. I like cream corn, but we rarely eat it. I like it over mashed potatoes, but I have a “family” recipe from my DH. It is easy and we have not had it for a long time. I wanted to participate this week in the spinach challenge. I have several recipes I like, but was sick most of the week. I didn’t do the shopping this week and we didn’t have any on hand. I don’t do canned spinach!

    I’m glad you liked the carrot recipe! I thought it was really tasty and I loved how simple it was.

    Creamed corn, eh? My husband swears you hate him. ;) ;) I like creamed corn but I’ve never done anything with it other than heat it up and serve it as a side dish.

    I don’t like creamed corn just out of a can but have you been to Babe’s? OMG, their creamed corn is YUM-MEE!! I do have a fav old recipe that uses creamed corn that I really like so that will be on the menu one day this week! YAY!

    Ohhh! Creamed corn … I can still remember (65 – 70 years ago). My mother would mix the creamed corn with cooked fresh spinach for me and my twin brother and sister. It was the only way she could get us to eat our spinach!

    The only way I know to eat creamed corn is in corn bread! Use a can of creamed corn to increase the moisture of the bread…. also add crumbled bacon, minced onion and some chili peppers and you have the BEST cornbread ever!
