I’m so looking forward to recipes submitted for the cream style corn. Here’s one more recipe I want to share with you. A reader sent this link and it’s very similar to a recipe I’ve made that isn’t made in the crockpot. This one is called Nicole’s Corn Chowder and it’s very similar to a soup I’ve made for several years, though mine isn’t made in the crockpot. And, while we’re talking about this recipe and the crockpot, The Crockin’ Girls are located right here in Brownwood, Texas!

Tofu
Remember . . this is a “challenge”. Please don’t wimp out on me here. Just to get you started, here’s a recipe for Asparagus & Tofu. I’m not even sue why I made this dish. As I recall, Vince was out of town and I was feeling a bit adventurous and tried this recipe. It was so delicious . . I couldn’t wait for him to get home so I could make this recipe for him.
So, really . . try a tofu recipe. You may be pleasantly surprised. I will tell you how we ended up with tofu for this week. A reader and I were chatting and apparently her husband has not been a big fan of any of the ingredients we’ve used so far and he jokingly asked why I don’t like him. I said “Fine! Let him pick the ingredient for next week!” So . . don’t blame me . . blame him!
I’m going to disappointed if only a few of you try tofu recipes this week so . . you don’t want to disappoint me, do you?








Tofu?! This will be tough. I can’t get my husband to eat basic stuff like spinach and cream corn (depending on what I made he might have eaten carrots or sweet potatoes). The next time I’m at the grocery store I’ll price tofu — then I’ll decide if I’m going to have to disappoint you.
Oh boy, tofu..that is NOT one I have a recipe that immediately comes to mind for. HA!! However did you come up with that? Oh wait, I think I just thought of something…..
How can someone not like all the other veggies you’ve chosen and yet like tofu? LOL Sorry – it’s a horrible texture issue for me – no tofu at my house.
I’m with you, Denise. Many years ago, I thought I would try it and of all things I tried, it was a peach tofu cheesecake. I can not even begin to describe how gross it was. It’s a wonder I still love peaches. It was that bad.
Not a difficult ingredient to use. We used to go to a vegetarian resturant in Taipei-you could not tell that you were not eating meat. The tofu takes on the flavor of the food it is cooked with.
I’d much rather eat tofu than creamed corn! Tofu is great in stir-fry, salads, and so much more. Agree with Diana in RR Texas.

I’ll share my secret to tofu – pressing all of the water out of it.
That takes care of the texture issue and then, like Diana said, it really does take on the flavor of the food you cook with it.
1 – Buy extra firm tofu.
2 – Set a plate on the counter. Fold a kitchen towel in half and set it on the plate.
3 – Put the tofu on the towel and then fold the second half of the towel over the top of the tofu.
4 – Put a second plate on top of the towel-covered tofu. Set two cans of cream style corn or another similar weight on top of the plate.
5 – Leave it alone for 30 minutes.
6 – Use the tofu in a recipe. The towel will be soaked with the water that has been pressed out of the tofu.
Yum!! There are so many options for using extra firm tofu in recipes as a meat substitute.
Cassandra, thanks for the information about Tofu. I tried it years ago and could not stomach the stuff. If we go shopping this week I will buy some and try it again.
On another note….Many years ago we would visit a cousin in southern Michigan. On the way there we would stop at a restaurant that served a corn fritter. It was served with either a syrup or molasses and I remember they were good.
People with underactive thyroids should not eat soy products. I used to love tofu but an endocrimologist I had several years ago told me not to eat it anymore.

I think that’s something everyone who’s concerned should talk to their own doctor about. Mine says there’s not a problem with eating soy in moderation.
OK, silly question. Where in the grocery store does one find tofu? I looked in the refrigerator section — and didn’t see any. Yes, I can ask, and may have to, but since my husband was with me I didn’t think it was a good idea.
