We use our smoker a whole lot in the summer but not so much in the winter . . not sure why. It had been a while since I had smoked a whole chicken but I did that Monday. It’s funny how I guess we take things for granted. After not having had any smoked chicken for a while, we both kept going on and on about how good it was.
The green beans were canned from the garden so they were good too.
Vince was going by the grocery store yesterday and he came home with two chickens so I’m thinking he wants more smoked chicken! He asked that I make chicken salad with the leftover chicken so I did that . . chopped chicken, toasted almonds, boiled eggs, sweet pickle relish, chopped dried cranberries, celery and mayo.
Nothing better than using leftovers to create a whole different dish!

i know you have an electric smoker. how many hours do you have to smoke a chicken per pound? we have a cold-smoker that we use for fish and to get a smokey flavor on large poultry and big roasts, usually about 2 hours or so, but we finish the other meats in the oven. for whole chicken or turkey parts, not a whole turkey, i give it about 1 hour in the smoker and the rest of the cooking in the regular oven. our cold smoker doesn’t get hot enough to really cook through anything much more than fish.
also, do you ever freeze smoked meats? i’ve had very good luck with that. especially smoked turkey parts for pea soup.
