He’s a Lucky Man!

My husband . . one lucky man!  I’m not sure he would agree but if I have to say so myself, I’m a darned good wife!  :)

Vince suggested that we have veggie burgers for dinner tonight.  My first thought was . . my menu is made and I’m not changing it but then we began looking through recipes and came up with one that uses black beans and other ingredients.  I had everything but the canned black beans but I had dried black beans.  It’s amazing that all the food we keep here and I don’t keep many canned beans because I so prefer dried beans to storebought canned beans.  I also didn’t have any hamburger buns here but knew I could make those.  I came across this recipe for 45 Minute Hamburger Buns.  These were amazing!  The recipe says it makes 12 services but I think that should be 8 or 10.  I made half the recipe and made 3 regular size buns and 3 slider buns.

Hamburger Buns

That recipe is quite easy and tasty.  I’m not sure how many folks make their own hamburger buns but they taste so different from the storebought mass produced buns.  There may be some gourmet type buns in the stores but they’re so easy to make.

The beans went into the pressure cooker and were done in no time and the burger mixture was made up.

Lettuce from the garden, along with sliced tomatoes not from the garden yet, topped off this mini tower!

Dinner!

Served with Crash Hot Potatoes and grilled asparagus and that was dinner at my house tonight.

The veggie burgers were really good.  If you compare them to a meat burger, it might be disappointing but if you think of a vegetable patty on a bun, they were delicious.  I could only eat half of mine and I’m stuffed.

    Judy, those looked good. One of our favorite burgers is a whole portobello, marinated, grilled and some cheese and some kind of a sauce. It is like eating a steak burger. Yum.

    Gosh, I had a burger, too, but it was mystery meat, and I didn’t eat those veggies, just the rest of the tomato that didn’t go in the hamburger. =) The buns look good, especially in the pictures where they are cut open.

    Oh lord, Judy, did you realize you wrote they were better than a veggie burger on a but? Oh that gave me such a wonderful mental image I had the best belly laugh in ages! Don’t fix it, let everyone stretch their imagination! Love you…

    They look so tasty – we also like black bean veggie burgers and we mix in some cooked quinoa before we bake them.

    Oooo! Those look good. I just cooked a batch of black beans yesterday. They have enough fiber in them that they don’t seem to disturb my blood sugar much. Maybe I’ll mash some up with some veggies and make a patty!

    These look really good. I must try the buns…I am new to baking but am going to try. My husband loved the crash hot potatoes the other night. We live in SC and are both graduates of Clemson. Love your adventures.

    Judy – up until now, when someone mentioned beans in burgers – my instant thought is felafel (which I LOVE!) But I can see this is going to become a favorite around here!
    Like you, I like using the dried beans rather than the canned stuff you buy in the grocery! Prior to this, I would use black beans either in vegetarian re-fried beans or in Brazilian black bean soup (a la Moosewood cookbook – delicious, btw!) I can see I need to expand my repertoire!

      And yes, you are a darned good wife! I probably would have handed him an apron, a spatula and a mixing bowl and told him to have at it! He’s a great guy, but – just like my son, does not necessarily realize where we are coming from!

    I needed some buns for dinner last night for impromptu BBQ Chicken sandwiches. Husband was late coming home from work. Made a half batch, rolled two in sesame seeds and proofed them for 20 min. They worked out very well.

    Ok, so I tried Black Bean Burgers again in my house and, like before, they were deamed “terrible”….Now the buns on the other hand, were fabulous!

    Homemade hamburger buns, using that recipe, for us too. Not sure you can convince me about the veggie burgers though. It’s a hard sell for a cattle rancher. :)

    Your food always looks so good. I have not made my own veggie burgers but my daughter makes her own hamburger buns. She likes them to be a little bigger than the ones you buy.
