Breakfasts are still the meals that I struggle with fixing. Without bread, cereal, grits, oatmeal, it’s just hard to come up with ideas for breakfast every day. We’re eat lots of eggs – scrambled eggs, boiled eggs, poached eggs, omelettes. Some days I’ll just have a few almonds and a handful of blueberries or blackberries.
During the week, we eat an early breakfast but on weekends, we eat breakfast about 10 and then have dinner about 4 and that’s it. We’ll eat a piece of fruit or a piece of cheese or celery with almond butter if we get hungry.
Considering that we used boiled eggs in tuna and chicken salad for lunch and then I usually slice a boiled egg into our salads, we’re easily going through 3 or 4 dozen eggs per week. This is when it would be nice to have . . not even gonna say it . . I miss my chickens . . especially Miss Hattie. I keep looking at the new baby chicks and wondering which one will be the star of the bunch. It was Ruby in Missouri and Miss Hattie here.
Breakfast this morning: The green bowl in the center contains cooked onions, jalapeno, mushrooms, and tomatoes. There’s also cheese, broccoli sprouts and bacon.
That’s 2 eggs for Vince’s omelette, 2 eggs for Speck and he also gets the white from one of my eggs, 2 eggs for my omelette except Speck got one of my whites. I don’t like the whites. I wish there was a chicken that would lay only yolks!
Omelettes, sausage and a few blackberries. It was good and very filling.

I’ve had two poached eggs for breakfast for so many years I can’t remember eating anything else.
Sometimes I’ll add roasted asparagus, sliced tomatoes and avocado when I know lunch will be late.

Have you tried a one minute muffin? There are lots of variations available. Here are a few http://findingradiance.com/recipes/breakfast/1-minute-muffin/ I use honey, and mix flax meal and almond flour when I make mine. I don’t think you will notice the egg white. After being low carb for a long time, these satisfy some of the bread cravings.

I like to make breakfast but hate getting up early in the morning to cook it. My husband loves when I make scrambled eggs with peppers and salsa and roll it up in a tortilla with a little cheese like a breakfast burrito. I like them too because they are fast, easy, & you can toss in just about any vegetables you like.
I’m a yolk person too…I hate the whites. Do they still say the yolk is bad for you, to only eat the whites? Im so glad you have new chickens to look after. I love your chicken stories!

How is your cholesterol doing? If I ate like that my heart would explode. I had to cut out cheese and meat completely to get mine down to normal levels. If you removed that, you’d have nothing to eat. Hopefully your body chemistry can process that better than mine. I get to eat bread, though. lol

I love Greek yogurt for breakfast, add a little fruit. I prefer the plain, add a little maple syrup. Just an idea…good luck!

We can’t have dairy but that would be a good breakfast if we could.
