As Vince said . . two for two! Vince had a big lunch out today so I knew he wasn’t going to be terribly hungry for dinner. I had a late lunch . . leftover Mongolian Beef and I think it was better today than it was last night.
Tonight I fixed Pumpkin Chicken Corn Chowder and it was delicious! So delicious! It cooks under pressure for 4 minutes. It takes a bit longer with the browning. As usual, I did a few things different. I browned the chicken and potatoes, then added the onion and garlic but it was really a great soup.
Since focaccia bread was in the picture on the website, I had to make focaccia bread too. We have plenty of both left over for the weekend and I want to cook more . . try more dishes.

Judy, so glad you are happy with it. Living in a very HOT area in the summer, as you do. Plig in in on the patio and use it all year. I used our old Presto that finally died for at least eo+ years. Love the link you put me onto.
Now that Vicky is gone, I am going to miss her so. But have made 4 trips to NOLA and hope I can see her again…you too!

There’s no need to plug it in on the patio. It cooks most things in less than 5 minutes and generates very little heat. If I’m using it during the day when the sun is shining, we have free power to keep the house cool.

I made breakfast quinoa, taco meat (again, it was so good yesterday) for lunch and bbq ribs for dinner in mine today. I am loving it too!

I have a regular Kuhn-Rikon stove top pressure cooker now. Yesterday while out Christmas shopping I saw the 6 quart Electric Pressure cooker. It was nice, but very Large. I just wondered where I would store it. My under counter shelves are only 9-3/4″ high between each shelf. I have two shelves down under. I would have to lug it into the pantry and leave it on the floor, or leave it out on the counter top all the time. I guess I was expecting something smaller. I was disappointed as now I don’t see an electric in my future cooking arsenal…..

You are really making me want to buy an electric pressure cooker for Christmas present to myself. Can you do canning in them too – like jellies and jams, tomatoes and string beans? I would love to get my meals done quickly and have them taste delicious – which is what I see you doing all the time.
