There wasn’t much to get done today. It always seems like more work than it really is.
The pork roast was seasoned and cooked so it will be ready for lunch tomorrow. I tasted it and it’s really good!
The meatballs were made for the Swedish meatballs. I’ll make the gravy on Tuesday morning just before serving them.
That’s a lot of meatballs. One pound of ground beef and one pound of ground pork . . it would be a lot of small meatballs. I could have taken half the meat mixture, added more spices and made it into a meatloaf but I have a meatloaf in the freezer so I divided the meatballs up and got 5 packages (4 for the freezer) of meatballs.
That’s one meal for Tuesday and four future meals. Even though this isn’t my recipe for meatballs that go into spaghetti sauce, I think I could put them in sauce and no one would complain.
Everything else for this week will be done on the day, or day before the meal is served.
