The fig tree must know the end of the season is near because it has turned into a fig producing machine. Every day I’m getting 4 – 6 cups of figs. With the cooler days, especially early in the morning, the figs are cold right off the tree and I could eat a bucket full but I keep reminding myself how horrible you feel when you eat too many figs!
Yesterday I made a fig cobbler.
We had Blue Bell Homemade Vanilla ice cream and nothing goes better, in my opinion, with warm cobbler than Blue Bell Homemade vanilla! It was so good.
For any fruit cobbler, I use 1 cup flour, 1 cup sugar, 1 cup milk, 1 stick butter, 2 tsp. baking powder, a pinch of salt and 2 cups of fruit.
Preheat the oven to 350°
Melt the butter and pour into a baking dish.
Mix the flour, sugar, milk, baking powder and salt. Pour into the melted butter. Do not stir.
Pour the fruit on top, pouring it as evenly as possible over the batter.
Bake for about 35 minutes or until the top is getting brown.
Simple as that!
