By the time I went to bed last night, I was exhausted. Maybe I’m getting too old to cook a monster feast! It doesn’t help that my knee is absolutely killing me. As soon as breakfast was over, I hit the deck running and hardly stopped til after midnight.
I made the brine, put the two turkeys on to brine.
I made the cornbread for the dressing.
I boiled all the giblets and neck bones for the gravy.
I strained the broth to use for the gravy and for cooking dirty rice.
I chopped the gizzards and hearts and pulled the meat off the neck bones for the gravy. I chopped the livers for the dirty rice. I had some onions that had sprouted while I was gone so I chopped the tops to add to the gravy and dirty rice.
I made Pioneer Woman’s pie crust recipe which makes enough for three pies. Did I mention that someone gave us a bunch of lemons and I think a lemon meringue pie is in my immediate future? And, did I mention that I could live on pie? I would choose pie over cakes and cookies any day.
The cranberry salsa is made. One with cilantro and one without. The one with cilantro is for me and I get more! I’m betting Vince ends up wanting a jar of canned cranberry sauce, which is fine . . we have that too.

At midnight, I put the two turkeys on to smoke.
Then . . I went to bed and slept like a rock.
Today I have to figure out what kind of rolls I’m going to make, stir up the green bean casserole, mix up and bake the dressing and make the gravy. All that will be pretty quick and easy. I think that’s all I have to do . . unless I think of something else I need to do.
