Strawberry Rhubarb Pie

We never had rhubarb when I was growing up and it wasn’t til just a few years ago that I tasted Strawberry Rhubarb Pie.  It was love at first bite!  Pies are my favorite dessert.  Cakes and cookies aren’t bad but they don’t come close to pie for me.  Almost every pie I make, I say “This is my favorite pie!”  Vince always says “You say that about every pie you make!”  Men!  Really, though . . honest . . this could be my favorite pie (at least for the day!).  Add a little Blue Bell Homemade Vanilla ice cream and . . who needs dinner?  I’m sure I know the answer to that question!

Ingredients:

Double pie crust
2  cups chopped red rhubarb, fresh
2 – 3/4 cups de-stemmed, washed and cut strawberries into quarters
1 – 1/2 cups sugar
2 tablespoons minute tapioca (Plus another 1 Tablespoon for spreading in the bottom of the pie shell)
1 tablespoon all-purpose flour
1 teaspoon lemon zest
1 teaspoon lemon juice
1/2 teaspoon ground cinnamon
1 teaspoon almond extract
3 tablespoons butter, cubed small

Directions:  Note:  You may want to sit the pie in a large cookie sheet with sides.  Mine always bubbles over a bit.

Spread pie crust in pie plate.  Sprinkle 1 T. tapioca in the bottom of the pie shell.

Combine the rhubarb, strawberries, sugar, remaining tapioca, flour, zest and juice of lemon, cinnamon, and almond extract. Mix well in a large bowl and pour into crust. Dot the top of the filling with the butter.  Add top crust and seal edges. Cover the edges with foil and bake at 425° for 15 minutes. Reduce temp to 375° and continue baking for an additional 45 to 50 minutes.

Let cool before serving.  (Dang it . . I always forget this part!)  :)

Picky About My Flour

Mom and Dad has asked me to make bread while I was there and since I’m a flour snob, and I knew I couldn’t get my favorite flour there, I brought along my bucket of flour.

These plastic buckets, with gamma seal lids are great for storing bulk items such as flour, sugar, wheat, beans . . anything I buy in bulk.  Wal-Mart had been getting their icing in these buckets and when the buckets were empty, they’d sell them for $1 or $1.50 but now they’re getting icing in boxes so I’ve lost that source for inexpensive buckets.

This flour bucket sits right outside my kitchen door in the garage and is used to keep the flour canister full.  Knowing there would be several loaves of bread made at mom’s, instead of bringing the canister that holds about 5 pounds of flour, the whole bucket made the trip.

While there, I made 5 or 6 loaves of bread, which is probably more than 5 pounds of flour.  And, I made a peach pie from peaches I had canned in the early summer.  It was so good . . I think I may need to make a peach pie for Vince and Chad for Thanksgiving!

The Disappearing Pie

Black Bottom Strawberry Pie – I think it was fantastic! You never get much pie when there are four kids around who love strawberries!

Mom made this pie.  It’s strawberry with a layer of chocolate in the bottom.  It was good . . I think.  I had a tiny sliver.  I wasn’t really hungry and thought I’d get a decent piece later but .. wrong way to think with four hungry children around.

We took it over to my niece’s house.

With four munchkins who love strawberries, it’s no wonder it didn’t last long.

Munchkins who are not camera shy at all!  This one has lost a tooth and insisted on getting a picture of the missing tooth . . but when she looked at the picture, the hole didn’t show so she demanded another picture.
