Bread Heaven

Edit:  Even though the recipe calls for two different types of tapioca flour, I used just one one . . Bob’s Red Mill Tapioca Flour.

That’s where I am . . bread heaven.

One of our favorite restaurants is Fogo de Chaos.  Vince loves their lamb chops.  I love their bread.  You know how Vince is about getting his money’s worth out of everything.  He never (well, almost never) says anything but I can tell he’s wondering why I’m eating so much bread when all that meat is available.

These are little bite sized pieces of heaven . . I’m telling you!   I’m not really ready to commit but I’m thinking these could be the most wonderful thing I’ve ever eaten (next to Eagle Brand Sweetened Condensed Milk!).  They’re crunchy on top, almost gooey in the middle.  There’s just a hint of cheese . .  sorry . . I just had to wipe the drool off my chin.

A couple of weeks ago, a loyal blog reader, Ida, sent me a link to some copykat recipe.  I wrote her back and thanked her and told her I’d be a happy lady if I could find a recipe for Fogo’s bread.  I had searched and searched and had even tried a couple of recipes before but nothing was right.

Within seconds, Ida wrote me back and sent me this recipe.  Took me a while to find the tapioca flour.  I found it that I could mail order but the shipping was always outrageous.  Yesterday while eating with my friend, Cindy, in Pittsburg, KS, I told her I’d been looking for tapioca flour and knew Bob’s Red Mill had it but couldn’t find it anywhere.  She suggested I try Ron’s Grocery there in Pittsburg.  I was meeting Chad after lunch to bring home some of his “stuff” since the semester ends today.  He went with me to show me how to get to Ron’s and can you believe it . . they have tapioca flour!  I’m going to talk to the Amish lady tomorrow and see if she can get large quantities of it.  I need a truckload!

Today for lunch I made gnocchi/spinach soup and these little gems.

I halved the recipe and using the mini muffin pan, it made 36 rolls.  That’s 35 for me and 1 for Vince!  :)   Not really!  Vince even took a couple back to a co-worker who loves Fogo too.

You have to try this recipe!  You really have to try it.  There’s no yeast . . it’s like a popover . . only better.

Thank you, Ida, for finding and sending this recipe to me.  Now . . I’m off to Wal-Mart to buy larger jeans.  I’m going to need them!  :)

Bread Obsession

It’s truly not an obsession . . I don’t think.  I’ll tell you next time I get brave enough to see how much weight I’ve gained! I’ve been having fun playing with my bread recipes.  So far, things have turned out great.  One day, I’m sure things won’t turn out so well and the chickens will get lots of fresh bread!

Sourdough sounds like fun so I searched the internet and combined a bit of one recipe, a bit of another and came up with a plan.  Sometime next week I should be able to try it in a batch of bread.

Popovers!  The recipe said this batch makes 12 popovers.  It will easily make 24.  I made 12 big ones and I think I used half the batter.  Not sure how well the batter keeps but I’ll know in a few days!

Another experiment was Cranberry Walnut Bread.
