There are so many good restaurants here and it’s hard to cook and eat at home. Many restaurants have keto meals but if I’m going out to eat, I want the good Louisiana foods I remember, cooked the way I remember them so . . we’re finding balance between eating out and cooking at home.
Tonight I fixed my old standby . . green bean bundles. And take a look at that Corning dish!
I also made a keto meatloaf – no bread, no ketchup . . . no carbs.
I also made a big salad – several kinds of lettuce, spinach, tomatoes, cucumber, cheese, avocado and celery.
Tomorrow I’m picking up a friend at 11 and we’re going to lunch so I’ve already told the men that I’m not fixing breakfast, I’m not fixing lunch and depending on where we eat, I probably won’t fix dinner. They said they’ll go out for breakfast and then go out for lunch. So . . no cooking til Thursday and I think I heard rumblings about going to a restaurant on Thursday that my uncle has been wanting to try.
