I do believe I’ve discovered what may keep me eating keto for a very long time . . low carb ice cream! This is the recipe I used. It really was delicious. The only thing I did different from the recipe was to use the immersion blender instead of shaking the jar.
I could have left it in the freezer a bit longer but I couldn’t wait. I kept going back and grabbing a spoonful . . just to test it and be sure it wasn’t going to get too hard and then I said . . heck with this . . I’m ready to eat it.
Definitely not something we’ll eat every day but it surely was nice for a treat.
