I have not been eating breakfast but I’ve been trying to eat a little fermented oatmeal because in a couple of weeks, I have to have my annual bloodwork done and oatmeal may lower cholesterol so I start out with 1/2 cup of raw steel cut oats and let it ferment on the counter for about 24 hours. I add a few blueberries and if Vince isn’t looking, I add a bit of honey. Now you know why he’s lost 70 or 80 pounds and I’ve lost 30 pounds! 🙂 That’s ok . . slow and easy, right?
This morning Vince wanted eggs and bacon so here’s my breakfast – 2 egg yolks, bacon, oatmeal with blueberries. No honey!
For dinner, I fixed Pork Tenderloin with Creamy Dill Sauce. It was super quick and super good! Vince said “This tastes like something from a restaurant”. I took that to mean (1) he really liked it and (2) my food doesn’t always taste like something from a restaurant! But, I just said “Thanks!”
This recipe is definitely going into my “fix for company” files! I browned the tenderloin pretty quickly over a hot fire so my pan drippings were apparently a little darker than the one in the recipe – my creamy sauce was darker. Also, I added one sliced jalapeno pepper. All you do is brown the tenderloin in a skillet. Stick the skillet in the oven at 425 for 10 minutes. I left mine in for 13 minutes because my tenderloin was a bit thick. Take the skillet out of the oven, remove the tenderloin to a plate, make the sauce in the same skillet. Serve. That quick! That easy!
